
This is one of my favorite recipes with all of my favorite flavors, sweet, salty, peanutty, spicyI could eat this every single day for lunch.
Ingredients
Sesame Peanut Sauce:
- ¼ cup soy sauce
- ¼ cup sweet chili sauce
- 3 T.sesame oil
- 2 T. peanut butter
- 2 T. rice vinegar
- 1 T.chili crunch (or hot sauce of your choice)
- 4 cloves garlic minced
- 1 lime juiced
Thai Noodle Salad
- 1 lb linguini or your favorite Asian noodle
- 1 red bell pepper, finely chopped
- 1 cup shredded carrots, finely chopped
- 1 cup slices Persian cucumber
- 1 bunch cilantro, finely chopped
- ½ cup scallions, finely chopped
- ½ medium red onion, finely chopped
- Add whatever other veggies you like — I change up this recipe regularly adding broccoli, shredded purple cabbage, cilantro, green onions, and I ALWAYS add a handful of chopped peanuts.
Instructions
- Begin by preparing your noodles al dente according to package instructions.
- When noodles are done, strain and rinse them with cold water.
- Meanwhile, whisk together soy sauce, sweet chili sauce, sesame oil, peanut butter, rice wine vinegar, hot chili oil, garlic, and lime juice until it’s smooth and creamy.
- Add cooked noodles to a large bowl and top with diced red pepper, carrots, cilantro, scallions, and red onion,
- Pour the sauce on top and toss everything together until each noodle is coated. Serve immediately or put in the fridge until chilled.
