Parmesan Vinagrette

I’m a creature of habit. I’ve been using a standard vinaigrette dressing (minced shallots, olive oil, mustard, and some kind of vinegar) for decades. But, I recently had a revelation when I tried this parm vinaigrette from ATK. THIS is my new favorite. Try it. You’ll LOVE it!

Whisk 3/4 cup finely grated (microplane) Parmesan cheese,

1/2 cup your favorite olive oil (I’m currently a fan of Sagra or Unio for the past 25 years, but I’ve been using Monini from Amazon as I can’t find Sagra anywhere in Arizona)

2 tablespoons rice vinegar (or your favorite),

1/2 teaspoon sugar or honey

1/4 teaspoon garlic powder

/4 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon dried oregano or rosemary

1/8 teaspoon red pepper flakes — I like to use Aleppo pepper.

That’s it — whisk and drizzle over your favorite salad. Photo to come.
