Pico de Gallo

If you buy those flabby, pale, tasteless, imitation pico de gallos in the deli case at the grocery store, it’s time to come to the light! There is absolutely no reason to do this ever again in your life when you can make this vibrant, fresh, flavor-packed version to serve with chips, tacos, quesadillas and even pasta in just a handful of minutes. AND if you can score summer vine-ripened tomatoes, you are on your way to a transcendent experience!

4 cups diced tomatoes, about 6 large tomatoes

1/3 cup minced onion

2 jalapeños, seeded if you prefer a milder version, and then minced

1/4 cup chopped cilantro

Juice of 3 medium limes

1 large clove garlic, minced

1 1/2 teaspoons kosher salt

Here are the very complicated directions: Mix all of the ingredients in a bowl, then taste and adjust seasonings to your liking. Eat it up!
